The time between November and February is the perfect season to plant your trees, if that is what you want.
Local Viveros or garden centres are now offering a good selection of young Mediterranean fruit trees for your garden, like oranges, clementines, lemons, kumquats, grapefruits, kakis, almonds or figs. They need plenty of water until they are established.
Another tree that would need lots of water to start up is the palm tree. But that is organically not really a tree, as it belongs to the Monocotyledons. Do not ever plant palm trees in Winter, but only during the heat of the summer. Make no mistake.
In keeping with the Mediterranean climate and a more responsible water management, you might also be tempted to plant some low-maintenance trees now, such as laurel, algarrobos (= carob trees), pomegranates, nisperos (= Loquats, or Common Medlar) and olive trees. Those species need less water to start with and hardly any, once matured.
This, the Winter season, is also a good time to plant vines or roses. Don’t delay.
